La Fira comes from the rocky hills of Cocentaina, in Spain's Alicante region, where farmers have worked the same orchards since the Roman Empire. A thousand years on the same hills, the same trees, the same work.
Most olive oil today is extracted with heat, because heat means volume. Heat also destroys the aromas and flavors that make olive oil worth reaching for in the first place. We cold press instead. It yields less, it costs more, and it is the only way to get what is actually in the olive into the bottle.
Single origin, from one farm in one region. Not blended, not gathered from four countries and mixed.
Spanish olive oil belongs in the same conversation as champagne from France, scotch from Scotland, and Reggiano from Italy. This is what that means when you taste it.
How to use La Fira
A finishing oil first. Pour it over warm bread, finish roasted vegetables, build a dressing, or set it on the table for dipping.
It also handles light sautéing, particularly vegetables and seafood, and works well as a medium for poaching.
